In Groups Of Three

This post is going to be a post of random thoughts about things, and, to make it even less probably   more interesting, I'm going to discuss things in groups of three.

Three Canadian Destinations On My Bucket List:

1.  Vancouver - I have yet to visit the west coast.  Considering my brother-in-law has lived there for 14 years, that is a shame on so many levels!  I've dipped my toes in the Atlantic, time to visit the Pacific.
2.  Montreal - I think that Montreal (perhaps many places in Quebec?) would have some cultural diversity that would be interesting.
3.  Ottawa - I'd love to see our nation's capital with the kids and solidify our awareness of our history and the blessing that is ours right here at home.


Three Saskatchewan Destinations On My Bucket List:

1.  Maybe next year - Lower Fishing Lake Provincial Park.  I've heard it's beautiful.
2.  La Ronge and/or points even further north - I'd love to see and appreciate our northern SK beauty.
3.  Cypress Hills - Elaine and I went there too many years ago.  I want to see it again.


Three Prince Albert Destinations To Visit and/or Re-visit:

1.  Movada's - P.A.'s newest fine restaurant, operated by friends of ours. 
2.  Dr. Java's Coffee House has more tea lattes that I NEED to sample
3.  Bison Cafe - I want to have a party in their back room.  Cool spot to hang.  Hmm....now I need an excuse for a party


Three Favorite Cookies:

1.  Nice soft big warm Gingersnaps
2.  Fresh chocolate chip cookies, plain jane
3.  Oatmeal raisin spice
Tastes of home.


Three Songs/Groups That Remind Me Of Being A Teenager:

1.  Anything and EVERYTHING Abba!
2.  "S-A-T-U-R-D-A-Y  NIGHT!!"
3.  The Bee Gees and "Stayin' Alive"


Three Extraordinarily Warm Memories of My Childhood:

1.  Our 1973 trip to B.C. in our blue GMC truck with a borrowed truck camper - waking up in the camper in the middle of the mountains with the smell of bacon and eggs in the air, frost on the nose and this incredible sense of "I love this".
2.  Riding around in a dusty grain truck with mom in harvest, working hard, talking lots, sharing much and laughing frequently.
3.  Christmas Eve - setting up the Christmas tree that we just brought home from the bush, hearing mom's elbows hitting the closet walls while she searched for our gifts to wrap and the sound of the tape pulling off the tape dispenser as she wrapped furiously to the noise of us knocking on her door, wondering if she was finished yet.  Singing carols.  The anticipation.  The warm wood heat. 


Three Moments I Will Never Forget From My Wedding Day:

1.  Waking up with "this is the day!" as my first awake thought!
2.  Seeing Dean at the end of that church aisle - I only had eyes for him.
3.  Sitting at the table during our reception, feeling in awe that this room full of people was there solely to bless us.


Three Jobs I've Had That Served Me Well:

1.  As hard as it is to think I was capable of or useful in any of it, my farm chores taught me responsibility and hard work, two things that have helped me in all parts of my life.
2.  Twelve long years at PAGHS as the Independent Living Program Co-ordinator.  I learned to be passionate about fighting for the underdog and to believe that people are capable of far more than we think.  I made friendships with some pretty ecclectic people - and I loved each and every one of them.  For some, the love part was easier.  ;)   I sobbed when I left them.
3.  My current job as an RN has made me dig deep on all levels - you nurse from the head, the heart, the soul, the intellect, the hunch.


Three Names I Had Wished I Was Named When I Was A Child:

1.  Glenda
2.  Stephanie
3.  I actually only had 2 names that I wished I was named.  Sorry 'bout the misleading title.


Three Silly Fantasies That I Have Had Or Still Have:


1.  As a child, I fantacized about being a professional figure skater and my fantasy was that I'd show up at our annual skating carnival and would be the surprise special guest that wowed the fans!  The reality was that I failed miserably at figure skating and moved onto piano lessons instead.  I think that was a wise move.
2.  I want to play on a pirate ship, like in "Hook".  I know.  It's a weird fantasy.  I think it would be fun.
3.  I would like to sing back up for Sting.  I wonder if he's hiring???



Three Things I Like To Make With Leftover Turkey:

1.  Turkey tetrazzini
2.  Turkey/lettuce/mayo/pickle buns
3.  Turkey and Wild Rice Soup ......  How's that for a seamless segue into a new recipe?!!  I'm such a geek.


Turkey And Wild Rice Soup

4 cups cans condensed chicken
2 cups water
1/2 cup finely chopped  onions
2 stalks diced celery
3 small to medium diced carrots
1/2 cup uncooked wild rice
8 slices bacon
1/4 cup margarine
2/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon poultry seasoning
1/8 teaspoon ground black pepper
2 cups half-and-half cream (I used 2% milk instead for a healthier soup)
1 1/2 cups cooked, diced turkey meat

Directions:
1. In a large pot over medium heat, combine chicken broth, water, green onions and wild rice. Bring to a boil, then reduce heat and simmer until rice is tender, 35 to 40 minutes.
2. Meanwhile, cook the bacon in a large skillet over medium heat until crisp. Allow to cool and then crumble. Set aside.
3. When rice is tender, melt the margarine in a medium saucepan over medium-low heat. Stir in flour, salt, poultry seasoning and pepper all at once. Cook, stirring, until smooth and bubbly. Stir in half-and-half and cook until thickened, 2 minutes. Stir half-and-half mixture into rice mixture. Stir in bacon, turkey and sherry. Heat through and serve.
This soup turned out very hearty....for some reason, my soups often seem to be more of a "stoup" - soup/stew, chowder - than soup.  But it's lovely.  Enjoy!

    Three things I share with you (there are more, but in keeping with your theme here...):
    1. Ottawa - I've been there - so so lovely! I'd go again, though perhaps without your boys!
    2. Movado's - I keep hearing the best things about it!
    3. Gingersnaps - especially with fresh squeezed orange juice all fizzy and pulpy!

      I am intrigued by the fresh orange juice with ginger snaps! Will have to try that. I like dunking in coffee, but you're not a coffee person, I don't think.
